recipe from one of our lurkers!
2 cans tuna packed in water (if you can get it with no salt do so).
lettuce (I’d say one head of Romaine would do it, otherwise, probably half a head of iceberg. Again, however much you want to put in. I find you don’t need a lot of lettuce with all the rest of the stuff in there).
3 hard boiled eggs, cooled
Frozen, fresh, or canned green beans cooked until just soft and chilled
4 small potatoes, cooked and chilled
Oil and vinegar to taste
3 tomatoes
Cool veggies, cut up eggs, potatoes, tomatoes, and if you like the green beans. Add to lettuce with the tuna and mix. Add oil (I use olive oil ‘cause it’s better for you!), and wine vinegar or whatever you like to taste. I usually use a seasoned rice vinegar, which is light and a little sweeter than wine vinegar. I think the original recipe called for a little mustard added to the mix. I do that if I have the time and energy, otherwise it works just fine the other way.
